Tomato, Basil and Sausage Gnocchi

3 vine ripened tomatoes cubed
16 oz fresh mozzarella cubed
2 packages of Gnocchi
8 oz. fresh basil roughly chopped
10 oz. grated parmesan cheese
1 pkg. hot italian sausage
1 large yellow onion chopped
2 cloves garlic minced
3 Tbs. extra-virgin olive oil
2 sprigs rosemary minced

Grill the sausage and slice into pieces. Sauté the onions in the olive oil for around 10 minutes adding the garlic near the end. Bring a pot of water to boil and add the Gnocchi. Let Gnocchi cook until it floats to the top of the pot (no more than 8 minutes). Combine tomatoes, sausage, mozzarella, onion, gnocchi, garlic, basil and rosemary in an oven safe dish and cover with Parmesan cheese and bake for 15 minutes in a 350º F. oven.
