Filet Mignon with Rich Balsamic Glaze

Steak Ingredients:
2 4-oz. filet mignon steaks
1/2 tsp. freshly ground black pepper to taste
Salt to taste
1/4 cup balsamic vinegar
1/4 cup dry red wine

Potatoes Ingredients:
1 lb. red potatoes, quartered
2 Tbs. butter, melted
1 tsp. minced garlic
1/2 tsp. salt
1/2 lemon, juiced
1 1/2 tsp. grated Parmesan cheese

1. Preheat oven to 350º F. 2. Place potatoes in a 4X4 baking dish. In a small bowl combine melted butter, garlic, salt and lemon juice; pour over potatoes and stir to coat. Sprinkle Paremesan cheese over potatoes. 3. Bake, covered, in preheated oven for 30 minutes. Uncover and bake an additional 10 minutes, or until golden brown.

1. Sprinkle freshly ground pepper over both sides of each steak, and sprinkle with salt to taste. 2. Heat a non-stick skillet over medium-high heat. Place steaks in hot pan, and cook for 1-minute on each side or until browned. Reduce heat to medium-low, and add balsamic vinegar and red wine. 3. Cover and cook for 4 minutes on each side, basting with sauce when you turn the meat over. 4. Remove steaks to two warmed plates, spoon one tablespoon of glaze over each and serve immediately.
