Curried Apple Salad

Curried Apple Salad

1/3 cup canola oil
2 Tbs. fresh lemon juice
2 Tbs. applesauce
1 Tbs. grated onion
1/2 tsp. curry powder, or to taste
Salt to taste
3 large, crisp, slightly sweet apples, unpeeled
1 cup finely diced celery
1/2 cup coarsely chopped almonds, pecans or walnuts

Mix together the oil, lemon juice, applesauce, onion and curry. Season with salt. Refrigerate until ready to assemble the salad, which should be done at the last minute. Quarter and core the apples, then slice and dice them. Toss with the celery, then with the dressing. Fold in the nuts.
